I implemented my version of a PATCH method as discussed in issue #64. It currently uses the RequestBody as a JsonNode and Jackson's ObjectMapper with readerForUpdating.
I am not sure whether this is a solution that is production ready but it works for me and might serve as inspiration for an actual implementation of PATCH
