Description
We need some API like
Pickler.derivedCustomise[Person](
_.age -> List(@EncodedName("x")),
_.name -> List(@EncodedName("y"), @Default("adam")),
_.address.street -> ...
)
to allow arbitrary schema customizations without touching actual case classes and sealed hierarchies.

Research direction
Use the proposed Pickler.derivedCustomise examples as the starting specification. Work out how field and nested-field schema adjustments, including encoded names and defaults, could be expressed without changing case classes or sealed hierarchies. Done means the shown customizations are supported through a coherent API.
