Description
For example, this section is completely out of sync with how the app currently looks and functions, ever since the rework nearly three years ago #2867
https://simplex.chat/blog/20230925-simplex-chat-v5-3-desktop-app-local-file-encryption-directory-service.html#simplified-incognito-mode
https://github.com/simplex-chat/simplex-chat/blob/d492606f01a24c242beef2249c5e3ca5b6f83650/docs/guide/chat-profiles.md#L40-L44
The global toggle it says to use just doesn't exist.

Research direction
Start with docs/guide/chat-profiles.md around lines 40–44 and compare it with the current app behavior described in the issue. Review the linked blog section and the rework referenced by #2867 to determine the correct flow. Done means the guide matches the current interface and no longer instructs readers to use the nonexistent global toggle.
