change `essnmx` package name to `esslauetof`

Description
Keeping in line with our push to make tools that are generally useful beyond ESS instruments, I want to change the name of essnmx package to esslauetof, to indicate these are tools which should be of use to any laue-TOF crystallography instrument, not just NMX.
