Description
Can you please add a config option for the executable which is executed for cargo.
Something like it is already possible for the cargo runnables with setting rust-analyzer.runnables.overrideCargo.
But the autodetected tasks uses the fixed "cargo" from here
https://github.com/rust-analyzer/rust-analyzer/blob/a15d19619e097b14b670064a4edc054a4251f479/editors/code/src/toolchain.ts#L126
And it can't be overridden in the tasks.json, too.

Research direction
Start with editors/code/src/toolchain.ts at the linked line where autodetected tasks use "cargo", then compare it with the existing rust-analyzer.runnables.overrideCargo setting. Trace how settings reach task creation and check tasks.json handling; done means the executable for autodetected cargo tasks can be configured consistently.
