RSW: configuring default R version

Description
I've tried to configure a default R version for our helm deployments following the instructions in the admin guide.
However neither setting config.server.rserver.conf.rsession-which-r nor setting config.profiles.profiles.r-version (under the * group) worked.
I couldn't find any k8s specific instructions.
Should the approaches mentioned above work in theory and hence the problem is most likely be on my side? 🤔
