[STAC-25585] Remove deprecated legacy installation with helm-values chart from the docs

STAC-25585
We deprecated this in version 2.8.0 and I still see customers using the helm-values installed version (for example today even).
A problem I learned today is that we’ve updated some of the sizing settings (like the # of datanodes for 4000-ha) in the new setup, but not in the old setup.
Can we force their migration by blocking installation when they still use the deprecated method with a separately generated Helm values?
