Description
In https://github.com/quickwit-oss/quickwit/pull/6148 we added support for offloading search to lambdas.
This is however not available in list_fields.
We should add this feature for list_fields, and push the offload threshold property into the SearchPermitProvider.

Start by reading pull request 6148 to understand the existing lambda search offloading, then trace the list_fields path and SearchPermitProvider. Extend the same offloading behavior to list_fields and move the offload threshold property into SearchPermitProvider; done means list_fields can offload search under the configured threshold.
