Research direction
Start by reading the shutdown work in #3200 and the related issue #3073, then compare the signal handling example in Vector's src/signal.rs. Clarify which signals and shutdown behaviors Quickwit should support before making changes; done means the agreed signal handling is complete and covered by appropriate tests.
