Description
Implement a trace Tower layer with configurable settings so we can easily add traces to gRPC clients and servers (this will give us precise network metrics: latency, protocol overhead, time to first byte, ...)
We might be able to use tower_http::trace::TraceLayer as is.

Research direction
Start by reviewing the gRPC client and server entry points and the tower_http::trace::TraceLayer documentation linked in the issue. The work is done when a configurable Tower trace layer provides tracing for both clients and servers, including latency, protocol overhead, and time to first byte metrics.
