Description

This notebook by @kegl shows a nice example of how to use pyresample with xray:
https://www.lri.fr/~kegl/Ramps/edaElNino.html#Downsampling

It would nice to build a wrapper for this machinery directly into xray in some way.

xref #475

Research direction

Start by reading the linked pyresample notebook, especially its Downsampling section, and review the related discussion in xref #475. Determine the intended scope and API for a wrapper in xarray; done means an agreed implementation direction for multi-dimensional resampling or regridding.
