Description
Is your feature request related to a problem? Please describe.
.encoding is somewhat hidden since we don't show it in a repr.
Describe the solution you'd like
I think it'd be nice to add it to the HTML repr, collapsed by default.

Research direction
Start by locating xarray's HTML repr implementation and inspect how existing sections are rendered and collapsed. Add the encoding information to that representation with the collapsed-by-default behavior, then verify the HTML repr shows it correctly.
