Description
With long-running (think hours) apply_ufunc(..., vectorize=True) calls, it would be nice to be able to have logging of the input non-core dims being evaluated, perhaps via a call-back.

Research direction
Start by reading the apply_ufunc(..., vectorize=True) entry point and clarify how input non-core dimensions are evaluated during long-running calls. Define whether the requested behavior is logging, a callback, or both, including when it should run and what it receives; the issue provides no named file or test, so the scope needs discussion before implementation.
