Description

If one wants to change the dimension values of a sidpy dataset, and that dimension name was already used, it is difficult to change the values of that dimension.
We would need a set_dimension function or something like that.

Research direction

Start by locating sidpy's Dataset dimension-handling entry points and reviewing how existing dimension names and values are stored or changed. Clarify the intended set_dimension behavior and identify the relevant tests; done should make changing values for an already-named dimension possible without breaking the dataset's existing dimension metadata.
