Description

This causes ordering issues like this:

import plotly.express as px
import pandas as pd

df = pd.DataFrame(dict(
    x=['a','b','c','d'],
    y=[1,2,3,4],
    z=['p','q','p','q']
))

px.bar(df, x="x", y="y", color="z")

Research direction

Start by running the pandas example in the issue and tracing how Plotly Express assigns category orders to the bar chart axes. Confirm the expected ordering from the example, then add coverage for the case and verify that the resulting axes consistently respect the category order.
