Description
Is your feature request related to a problem?
There are many date/time related properties across the API that are currently only represented as an epoch millis long or a formatted string.
What solution would you like?
We should map these properties to a strong DateTime type.
What alternatives have you considered?
Leave properties as long or string.

Research direction
Start by surveying the OpenSearch Java client’s API date/time properties and how they are currently represented as epoch-millisecond longs or formatted strings. Identify the intended strong DateTime type and the full set of affected properties; done means those properties are consistently generated with that type instead of long or string.
