Description
Is your feature request related to a problem? Please describe.
As a preprints/repository administrator, I want to ensure that the custom metadata collected by our preprints servers can be shared in the JATS oai-pmh fields using the JATS metadata field.
Describe the solution you'd like
A field for JATS metadata on the custom fields form, similar to the one available DC metadata / a column in repository fields for JATS metadata type.

Research direction
Start by locating the custom fields form and the existing DC metadata option, then trace how repository fields are represented for JATS metadata. Confirm how custom values are exposed through the preprints JATS OAI-PMH fields; done means administrators can select JATS metadata for a custom field and the value is included correctly.
