Description
Worth having a look again at whether flattening the NWP data whilst processing through ocf-data-sampler will make things easier, idea would be to flatten -> process -> re-nest so that the output would similar to the config structure. The task would be to investigate how easy it would be to implement and how much code we would save with it flattened for processing.
