Describe your environment
Just doing whatever KServe likes in an EKS cluster

Steps to reproduce
Deploy a KServe InferenceService and attempt to instrument it using the OTEL operator

What is the expected behavior?
No errors

What is the actual behavior?
Errors - Log File:
grpc-aio-error.log
