[CHORE] Matrix-based testing of a provider with all supported SDK versions in CI

Description
We can consider creating a testing matrix for providers that tests the provider with multiple versions of the SDK. We do something similar with the OpenFeature Operator and K8s versions.
This issue should be used to investigate the practicality of doing this in contrib repos (for example the Java contribs). If this is not practical or not worth doing, this issue can be closed.
