Description
Publish a new package that automatically uses the latest version of Unicode.
It will be easier to use in places that only care about the data; currently, we need to uninstall @unicode/unicode-17.0.0 and install @unicode/unicode-18.0.0.
Maybe @unicode/unicode-latest or just @unicode/unicode?

Research direction
No files or tests are named. Start by reviewing how the repository publishes its versioned Unicode packages and how consumers select a package version; decide whether the proposed package name and update behavior fit that workflow. Done means a stable package provides the latest Unicode data without requiring consumers to uninstall the prior version.
