Description
Description of feature
nf_core/utils.py fetches the pipeline's configuration with nextflow config -flat which returns all options as key = value. Values that are not simple strings/numbers, like manifest.contributors, need extra parsing.
It'd be much more straightforward to do nextflow config -o json

Research direction
Start in nf_core/utils.py and inspect how the pipeline configuration is fetched and parsed from nextflow config -flat. Run the existing configuration-fetching path, then switch it to the JSON output form and confirm that values such as manifest.contributors are handled without extra parsing.
