You can access the wslg logs using explorer at: \\wsl$\<Distro-Name>\mnt\wslg (e.g.: \\wsl$\Ubuntu-20.04\mnt\wslg)

Actual behavior

-Error: unable to open display:0
-OpenGL apps work correctly however

Start by reproducing the display failure with glxinfo in the reported Ubuntu 20.04 environment, then inspect the attached weston.log and pulseaudio.log files alongside /mnt/wslg/versions.txt. Done means identifying the Xwayland failure and confirming that the affected display scenario works without regressing the reported OpenGL behavior.
