[NES] Next Edit Suggestion data privacy and allow to change model provider

Description

I want to point out that enabling by default something that copy my text on the internet is probably not data privacy friendly if done without consent.
It becoming very unclear to me what is accessible or not and what is the usage if anything is stored in copilot endpoints.

NES as any telemetry option should not be enabled by default or at least without notice.

Also NES is the only AI tool where it is actually not possible to change the provider. Is there any reason behind that?
