Description

Close the Dependabot coverage gap for the moderation eval Python project by adding `scripts/evals/moderation` to the uv ecosystem configuration, and split into distinct `security-updates` and `version-updates` groups.

- [ ] `scripts/evals/moderation` is added to the Dependabot `uv` ecosystem in `.github/dependabot.yml`
- [ ] Updates for this path are split into `security-updates` and `version-updates` schedule groups
