Update vendored OpenTelemetry code

We have 3 libraries that we copied from https://github.com/open-telemetry/opentelemetry-dotnet-contrib because we wanted to ship stable, but these libraries haven't shipped stable yet. See [Remove dependencies on unstable OpenTelemetry packages in Aspire Components (dotnet/aspire#2819)](https://github.com/dotnet/aspire/issues/2819).
