Create new "Interesting Projects" ecosystem category

Description
We sometimes get requests to add projects to the ecosystem index that doesn't really fit into one of the existing categories.
We decided in the WG meeting on 2026-07-16 to add a category "Interesting Projects", mirroring the TWIM section of the same name. This would fit projects such as Cactus Comments, https://github.com/matrix-org/matrix.org/pull/3374, etc and finally let us present them on the website (again). Possibly some of the content on https://github.com/HarHarLinks/tune-your-chat/ might also work.
There is also an issue suggesting we add a single page that allows you to browse all projects at once https://github.com/matrix-org/matrix.org/issues/3072. In my opinion these complement each other rather than conflict.
