Add docs and examples around available protocols

We should add docs and possibly examples around the [available protocols](https://github.com/maplibre/maplibre-native/blob/main/include/mbgl/util/constants.hpp#L60-L63 and how to use them. This will also be connected to #28, once implemented on native this might just be an documentation issue on our side.

Start with include/mbgl/util/constants.hpp at the linked available-protocols section, then review how MapLibre React Native exposes or documents those protocols. Check the dependency on #28 before proceeding. Done means the supported protocols and their usage are documented, with examples if the native implementation makes them possible.
