Description
I am trying to understand when it would make sense to use each of the following options:
--target
--target_arch
--target_platform
Perhaps we can update the README to better explain some scenario's where these would be useful?

Research direction
Start by reading the README sections that document the --target, --target_arch, and --target_platform options, then review how node-pre-gyp describes binary deployment. Done means adding clear explanations and practical scenarios for when each option is useful, with the README updated accordingly.
