Update the list of third-party adopters, with solid criteria

We have the lists of third-party project in:
- https://lima-vm.io
- https://lima-vm.io/docs/community/#projects-using-lima
- https://github.com/lima-vm/lima#adopters
- https://github.com/lima-vm/lima/blob/master/ADOPTERS.md

These lists have to be updated to include recently released projects: https://github.com/lima-vm/lima/discussions/categories/show-and-tell

We also need to have solid criteria to maintain the list:
- Minimum number of GitHub stars?
- Can be easily forged with fake accounts?
- Doesn't work for projects outside GitHub?
- Any other criterion to measure the popularity of the project?
- Limit the list to FLOSS?
- The list is expected to be limited to projects that heavily invokes Lima commands under the hood.
