[Docs] Illustrate cloud/spaces/environments with prod-aws and prod-gcp environment setup

## Overview
Update `cloud/spaces/environments` to use Five connecting `prod-aws` (EKS + RDS + S3 + CloudFront + SQS) and `prod-gcp` (GKE + Cloud SQL + Cloud Storage + Pub/Sub) as the primary multi-cloud environment examples.
