Unable to uninstall after running install of new version and before restarting

Description
I installed the latest version and it keeps trying to force a reboot which I don't want to happen yet.
When I tried uninstalling the keybase client it allowed me to uninstall the old version but it won't allow an uninstall of the latest install because a "system restart is required"
I should be able to uninstall the client at any point in time.
