Error when updating using Poetry: Broken dependencies in versions >=7.1

## Description

When I update `notebook` to version 7.1 or higher, my poetry (ver 1.3.2) does not recognize the dependencies on jupyterlab and jupyter-server, and deletes them:

And without those one can't launch notebook.

I see that some of those dependencies are present in the `pyproject.toml` in this repository, so the problem might be elsewhere.

- Operating System and version: Windows 10 ver 22H2
- poetry version: 1.3.2
- notebook version: 7.1 and 7.2

Start by inspecting pyproject.toml and reproducing the dependency resolution with Poetry 1.3.2 while updating notebook to version 7.1 or higher. Confirm whether the declared jupyterlab and jupyter-server dependencies are preserved and that the installed dependencies allow Notebook to launch.
