Self-host images and pull latest star count on each build

For now, we are manually adding stars for each project and linking to images online. We should use gatsby-transformer-json to get the latest star count and also download the images from the links so we don't have a ton of external requests.

Unfortunately, I'm not experienced with gatsby-transformer-json to do this so if anyone has an example or can point to documentation, please link it below.
