Project Maintainer: django-rest-knox

I've recently started working on this package and plan to use it long-term on a few enterprise projects.

I don't have specific experience with this package, but I have a lot of experience and contributions to Open Source software, specifically in the Open edX ecosystem (I had maintainer rights and contributed a few features to [openedx/edx-platform](https://github.com/openedx/edx-platform) and [openedx/xblock-lti-consumer](https://github.com/openedx/xblock-lti-consumer)).

@James1345 (previous repository owner before it was transferred to Jazzband) gave me a thumbs up for the maintainer role on https://github.com/jazzband/django-rest-knox/issues/304#issuecomment-1683854410.
