[Task]: Compile natively for M1 Macs

### Task description

The Mac builds currently use Rosetta. There should be native M1 compilations available.

### Requirements

- Investigate what is required to compile native M1 versions
- Update the build script
- Publish separate versions for Intel vs. M1 macs
