[enhancement]: Gallery management - Categories "Sort by" feature

### What should this feature add?

The current categories of gallery are sorted by "Date created" I guess. So, in some cases, it's not user friendly.
It would be great if user could sort categories by:

- Name
- Date modified
- None (User can drag and drop the category to re-arrange) -> This would be amazing I hope.

and Descending/Ascending for each kind of sort.
