Description
Update almalinux image to provide a valid set of languages/runtimes/tools that work as base for Invenio, InvenioILS and InvenioRDM following what was done for the debian image.
Then update the tests-almalinux to cover those (TODO in tests-almaliux.yml).

Compare the existing Debian image build with the AlmaLinux image, then inspect the TODO in tests-almaliux.yml and the work described in #86. Identify the language, runtime, and tool coverage expected for Invenio, InvenioILS, and InvenioRDM. Done means the AlmaLinux image provides the aligned set and its tests cover those requirements.
