How to do a completely clean uninstall/re-install of Inky on Windows 10?

So I've been using Inky for a while now with no problems. However, the other evening we had a storm come through and my power cut out while I was writing. Ever since then, Inky doesn't work correctly. It can save and load Ink files just fine...Until I try to export them to a JSON. Then, for some reason, it insists on replacing the .ink file with the generated .json file?? Instead of creating a SEPARATE file that's filename.ink.json, like it's supposed to do. Even when I try to export the JSON over an old JSON file that I know works, it refuses. Saves to the .ink file instead.
I don't mean that it deletes the .ink file and only saves filename.json. I mean that it saves the exported JSON formatted document as filename.ink, overwriting it entirely.
Naturally, this causes problems.
So I backed up my .ink files as .txt files and deleted the entire Inky and Inklecate folders. Redownloaded them both. But unfortunately, the problem persists. I've tried putting the folders in different locations on my computer, but still. The problem persists. I guess there's a registry entry or something I need to edit? I don't know. I'm frustrated to tears with this.
On a totally new file, Inky is still having problems. The very first time I try to export to JSON, it will tell me there's a problem with the file and it can't be exported. If I change ANYTHING in the file after trying to export to JSON the first time, it will then export it. But it exports it with the same problem as above, where it replaces the .ink file instead of creating an actual .json file.
Please somebody help me. I've got 125k words written in Ink and I'd be devastated to have to basically start over in another system entirely. I've attached a screenshot of the bizarre "Could not export" error message on a totally new and clean file. IDK if it'll help, but I'm not sure what else to include.
