Description
Currently, Giraffe only has options for a single Y axis. This is challenging for overlaying timeseries with different ranges.
Giraffe needs to be able to add many additional Y axis, ideally one for each timeseries, with their own scaling options.

Research direction
No files, tests, or entry points are named in the issue. Start by locating the existing single-Y-axis and timeseries overlay implementation, then clarify the axis API and scaling behavior before making changes. Done means multiple additional Y axes can be assigned to timeseries, each with its own scaling options.
