Add support for categorical outputs to evaluation chains (e.g., sentiment analysis)

Right now, evaluation nodes assume numerical metrics; however, some types of evaluations output categorical responses (e.g., "is this comment positive, neutral, negative, or toxic?"). CF evaluation and vis nodes should support plotting categorical data.
