Reduce wit-test prop test samples

`src/hyperlight_host/tests/wit_test.rs` is ran at every pr job, and is running default number of samples (256 per test I believe). We can probably reduce this number to get faster ci/test times without any major loss. This should still be able to capture any regressions as we run very often

Start by reading src/hyperlight_host/tests/wit_test.rs and identify how property-test sample counts use the default of about 256. Choose a lower sample count that preserves the existing tests, then verify that the PR test job completes faster without removing regression coverage.
