Log settings changes (e.g. stack) in dashboard activity log

### Tell us about what you're trying to solve. What challenges are you facing?

There are some changes that are not displayed in the dashboard activity log.
It would be nice to have a more thorough audit trail of settings changes.
For instance, changing the stack, buildpacks and certificates should be displayed under activities.
