Docker image sizes

Not necessarily a problem but something I could see as an improvement depending on the outcome.

Would love to see some form of a slim docker image. Looks like there was some slim images years ago but haven't really been maintained. We use hasura for distributed systems in the field and would love to have a docker image to deploy that is smaller than ~500MB

Start by reviewing the repository's current Docker image configuration and the history of the older slim images mentioned in the issue. Determine how a smaller maintained image would be built and published, and consider the work complete when a documented slim image is available and its size is meaningfully below the current roughly 500 MB image.
