Update TestFindLatestEKSBuilds/eks/* Version Check Tests

The `TestFindLatestEKSBuilds/eks/*` have become extremely unstable due to accelerated release cadence from the upstream on the core components that are being checked. The release cadence used to be much less frequent, often only updating once or twice per EKS release cycle. The implementation of the tests have a static version lookup table that is out of date/sync almost on a weekly basis. The implementation of the tests should be updated such that they do not require constant updating.
