Steps to Reproduce:

Go to the product list page.

Click Edit on any existing product.

Observe the subcategory field.

The subcategory field should display the current subcategories assigned to the product.

Research direction

Start at the admin dashboard's product list and follow the Edit flow into the product update form. Reproduce the issue with an existing product that has subcategories, then trace how its current subcategory selection is loaded; done means the assigned subcategories appear and remain modifiable when editing the product.
