Exploration: Improved docs on creating dashboards

This likely isn't needed but documentation on _how_ to create custom dashboards could be beneficial. The current documentation does well but running in production, some developers may want to create compound queries that give deeper insight to Open Match performance and metrics. This is purely to gauge how likely documentation like this is needed within the community.
