Add new assertions to PathSubject

Now that #285 is resolved, we probably want to add some actual `Path`-y assertions to `PathSubject`. JimFS has their own [`PathSubject` implementation](https://github.com/google/jimfs/blob/master/jimfs/src/test/java/com/google/common/jimfs/PathSubject.java) that's probably a good place to start.
