Consider additional user events for the "Last Seen" date

Currently certain events are tracked for students such as login, video play/pause, etc. Since only certain events are tracked the "last seen" date might not be accurate depending on the actions a student has taken.

**Describe the solution you'd like**
Look into adding some additional events so the "last seen" date is more accurate.

**Describe alternatives you've considered**
Re-labeling the column, but that could cause other confusion and still not accurately reflect what the date is.
