Description
If SOPS could sort keys when adding via --set it would help a lot for readability of large files, now it adds new key/value at end of section. Something like --sort-keys <asc|desc> maybe ?

Research direction
Start by tracing the existing --set command handling; the issue does not name implementation files, tests, or an entry point. Define how --sort-keys asc|desc should order keys recursively at each indentation level, then verify that adding values with --set produces the requested ordering across supported file formats.
